First breakfast


And this would probably be my first breakfast of any kind for a long time, not counting the few late ones I had when at my parents’ place over the holidays. Generally it wasn’t a meal that I did, and who knew it was potentially holding me back from fat loss. Well… we’ll see if that is the case.

I didn’t get a photo of the breakfast today, perhaps I will in the future for reference. But the ingredients were:

  • 3 whole eggs
  • 1/2 can of black eyed peas
  • hot salsa
  • touch of olive oil
  • cayenne pepper

I opened the can of beans first, which was definitely the most difficult part of the whole experience since I don’t have a proper can opener. Note to self. In fact I broke the one “can opener” that I did have which only sort of worked. Pried open the lid and dumped the beans into a bowl. Very thoroughly drained, rinsed and re-rinsed the beans. I then took half of the beans and put them in a frying pan with a couple drops of olive oil. Put on medium-low heat. Within a couple minutes I cracked in the three eggs. Quickly scrambled everything together. Add some cayenne pepper. Once the egg was cooked, I put the whole lot into a bowl and covered with a hot salsa. You could heat the salsa in the pan I guess, but I like the juxtaposition of the hot eggs and cold salsa.

Tasted great and by my reckoning, it should have around 35g of protein.

I now realize that I should have bought more beans, and eggs. But what I do have should last me until the weekend when I can get back to the store.
